Baking with cottage cheese might sound unusual at first, but it is one of my favorite kitchen tricks. When you blend it until smooth, it creates the perfect base for this cottage cheese protein triple chocolate cheesecake.

It gives the filling a light and creamy texture without making it feel dense or greasy. The mild flavor also lets the melted chocolate and cocoa powder truly shine.
Best of all, using it turns this rich treat into a high protein dessert that keeps you satisfied.

I like to top the chilled cake with a simple dark chocolate ganache and mini chocolate chips to bring all the layers together.
It takes a little patience while it sets in the fridge, but the final slice is completely worth the wait.
Why I Love This Recipe
High in Protein – Blending cottage cheese and Greek yogurt gives you a seriously high protein dessert without needing chalky protein powders.
Triple the Chocolate – You get deep cocoa powder, melted chocolate, and a rich dark chocolate ganache in every single bite.

Ultra Silky Texture – Pureeing the cottage cheese creates a velvety smooth filling that feels just like a traditional bakery cheesecake.
Lighter Than Normal Cheesecake – Swapping heavy cream cheese for cottage cheese keeps it rich while feeling much lighter on your stomach.

How to Make This Recipe
Step 1
Preheat the oven to 350°F and wrap the outside of a 9-inch springform pan with two layers of heavy-duty foil. Mix the chocolate graham cracker crumbs, sugar and melted butter, press firmly into the bottom of the pan and bake for 10 minutes.
Let the crust cool, reduce the oven to 325°F and bring a kettle of water to a boil.
Step 2
Melt the semisweet chocolate in the microwave in 30-second bursts, stirring between each, until smooth. Set it aside so it cools to warm but not hot.
Step 3
Blend the cottage cheese in a food processor or blender for 2 to 3 minutes, scraping down the sides, until completely silky with no curds left.
Step 4
Add the cream cheese, Greek yogurt, sugar, cocoa powder, cornstarch, espresso powder, vanilla and salt, then blend until smooth. With the machine running, pour in the melted chocolate and blend until fully combined.
Add the eggs and pulse just until they disappear into the batter, about 5 pulses.
Step 5
Pour the filling over the crust and tap the pan on the counter to release air bubbles. Place the springform in a roasting pan, add hot water about 1 inch up the sides and bake for 55 to 65 minutes, until the edges are set and the center still has a slight wobble.
Step 6
Turn off the oven, crack the door and let the cheesecake cool inside for 1 hour. Remove it from the water bath, loosen the edge with a thin spatula, cool to room temperature and refrigerate for at least 6 hours.
Step 7
For the ganache, heat the heavy cream until steaming, pour it over the dark chocolate and let it sit for 3 minutes before stirring until glossy. Cool for 10 minutes, pour over the chilled cheesecake, spread to the edges and sprinkle with mini chocolate chips.
Chill for 30 minutes until the ganache sets, then release the ring and serve.

Quick Tips
Blend the Cottage Cheese Completely
From my experience, you must blend the cottage cheese completely on its own until it looks as silky as sour cream before you add any other ingredients. This step gives you that classic rich cheesecake texture while keeping all the high protein benefits of cottage cheese.
Cottage cheese curds will not melt in the oven, so any tiny lumps left in the blender will end up in your baked cake. Stop your machine once or twice to scrape the sides down to make sure every single curd is gone.
Let the Melted Chocolate Cool Down
I recommend letting your melted chocolate sit on the counter until it feels barely warm to your finger before you pour it into the batter.

If the chocolate goes in while it is still hot, it will shock against the cool dairy and turn into tiny, hard bits. It needs to stay fluid and lukewarm so it folds smoothly into the batter for a deep chocolate color.
Protect the Crust from Water Leaks
Water baths are great for gentle baking, but water can easily sneak through foil seams and turn your crust soggy.
You’ll get the best results if you use extra-wide, heavy-duty foil so there are no seams along the bottom of the pan. You can also place the wrapped springform pan inside an oven-safe roasting bag or a slightly larger round cake pan before setting it in the water.

Quick Answers
Will the cheesecake have a lumpy texture or taste like cottage cheese?
Not at all, because blending the cottage cheese until silky smooth completely breaks down the curds before baking.
The cocoa and melted chocolate mask any mild cheese flavor, giving you a protein-packed dessert that tastes just like traditional bakery cheesecake.
