Blend the Cottage Cheese Until Fully Smooth
The cottage cheese needs to go into the blender until you don’t see a single lump left. If you rush this step, you’ll end up with little curds in your pancakes and a texture that feels grainy instead of soft.
From my experience, giving it a full minute in the blender makes a big difference. You want the wet mix to look completely smooth and pourable before it touches the dry ingredients.
Don’t Skip Resting the Batter
