If you love soft oatmeal sandwich cookies, you are going to enjoy this recipe.
I created these cottage cheese protein oatmeal cream pies as a wholesome sweet treat that you can feel good about eating.

Because this recipe is high protein, it keeps you full much longer than any regular store-bought cookie.
The cottage cheese works wonders for the overall texture. Blending it completely smooth adds extra moisture to the oatmeal cookies so they never dry out in the oven.
It also helps create a creamy, fluffy filling that holds its shape nicely between the two cookies.
Why I Love This Recipe
High in Protein – Blending protein powder and cottage cheese into both layers creates a truly nutritious, high-protein snack.
Nostalgic Bakery Flavor – Molasses, cinnamon, and brown sugar give you that classic childhood Little Debbie taste in every bite.

Ultra Soft Texture – Blended cottage cheese locks in moisture so these oatmeal cookies stay incredibly soft and chewy.
Thick Creamy Filling – The whipped cream cheese center is rich, fluffy, and pipes beautifully without running everywhere.

For the Oatmeal Cookies

How to Make This Recipe
Step 1
Blend the cottage cheese for the filling until completely smooth. Add the cream cheese, protein powder, powdered sugar, vanilla and salt, then blend until thick and fluffy.
Transfer the filling to a bowl, cover and chill for at least 1 hour so it firms up to a pipeable consistency.
Step 2
Preheat the oven to 350°F and line 2 baking sheets with parchment paper. Blend the cottage cheese for the cookies until smooth.
Step 3
In a large bowl, whisk the blended cottage cheese, melted butter, brown sugar, molasses, egg and vanilla until smooth. Add the flour, protein powder, oats, cinnamon, baking soda and salt, and stir until fully combined.
Let the dough rest for 10 minutes so the oats soak up moisture and the dough thickens.
Step 4
Scoop 24 rounded tablespoons of dough onto the baking sheets, spacing them 2 inches apart, and flatten each one slightly. Bake for 9 to 11 minutes, until the tops are set but still soft.
Step 5
Cool on the baking sheets for 5 minutes, then move to a wire rack and cool completely.
Step 6
Pipe or spread a thick layer of the cream filling onto the flat side of half the cookies and top with the remaining cookies. Chill for 30 minutes to set, then store in the fridge.

Quick Tips
Stick With a Whey-Casein Protein Blend
You will get the best results if you use a whey-casein protein blend rather than pure whey powder. Casein absorbs liquid like flour does, which keeps your filling thick and gives the cookies a tender, cakey bite.
Pure whey tends to dry out during baking, and it can make the chilled filling turn thin and runny.
Using this specific blend is the secret to getting a rich protein boost in every bite without ruining the classic soft texture of an oatmeal cream pie.
Blend the Cottage Cheese Completely Smooth
From my experience, you need to blend the cottage cheese by itself until it looks completely smooth like sour cream before adding the other ingredients.

If you leave any tiny curds in the mix, your cream filling will feel grainy on your tongue instead of silky.
A bullet blender or a small food processor cup works best here since the amount of cottage cheese is relatively small.
Let the Dough Rest Before Baking
I recommend letting your mixed cookie dough sit on the counter for a full ten minutes before scooping it onto your baking sheet.
The quick oats need that time to soak up the moisture from the cottage cheese and melted butter.
If you bake the dough right away, the cookies will spread out too thin on the pan instead of staying thick and chewy.

Quick Answers
Can I substitute old-fashioned rolled oats for quick oats?
You can use rolled oats, but it is best to pulse them in a blender a few times first to break them down. Whole rolled oats will not absorb the wet ingredients as quickly, which can make your dough too loose to hold its shape.
