One of my favorite things to bake when I want a cozy treat is these cottage cheese protein coffee cake cookies.
They give you the classic coffee cake experience, complete with a buttery crumb topping and a sweet cinnamon swirl.

The secret to the dough is blended cottage cheese, which makes the cookies incredibly soft and keeps them from drying out.
Because this is a high protein recipe, you get a satisfying snack that keeps you full much longer than standard bakery sweets.
I also finish them with a simple sweet glaze, making them perfect to enjoy with a warm cup of coffee.
Why I Love This Recipe
Protein-Packed Treat – Blended cottage cheese and protein powder give these cookies extra fuel without sacrificing rich dessert flavor.
Melt-in-Your-Mouth Soft – Cottage cheese locks in moisture to create an ultra-soft, tender center that stays fresh for days.

Buttery Crumb Crunch – A thick cinnamon streusel topping brings the ultimate bakery-style crunch to every single bite.
Warm Cinnamon Swirl – Cinnamon and brown sugar folded through the dough deliver authentic coffee cake flavor throughout.

How to Make This Recipe
Step 1
In a small bowl, stir the flour, brown sugar and cinnamon for the crumb topping, then drizzle in the melted butter and mix with a fork until large clumps form. Chill while you make the dough.
Step 2
Blend the cottage cheese until completely smooth. In a large bowl, beat the softened butter and sugar for 2 minutes, then beat in the blended cottage cheese, egg yolk and vanilla until creamy.
Step 3
Add the flour, protein powder, baking powder, baking soda and salt, and mix until a soft dough forms. Mix the brown sugar and cinnamon for the swirl, sprinkle it over the dough and fold just 2 or 3 times to create streaks.
Cover and chill the dough for 20 minutes while the oven preheats to 350°F.
Step 4
Line 2 baking sheets with parchment paper. Scoop the dough into 14 balls, about 2 tablespoons each, and flatten into 3/4 inch thick disks.
Press a generous amount of crumb topping onto each cookie so it sticks well.
Step 5
Bake for 12 to 14 minutes, until the edges are lightly golden and the crumb topping is set. Cool completely on a wire rack.
Step 6
Whisk the powdered sugar and milk until smooth and drizzle over the cooled cookies. Let the glaze set for 15 minutes before serving.

Quick Tips
Stick With a Whey Casein Blend
I recommend sticking with a blend of whey and casein powder for these cookies. This blend keeps the baked texture soft while giving you a great protein boost in every bite.
If you use pure whey protein, the cookies can easily turn out dry and rubbery. Casein absorbs liquid more like flour and helps recreate that classic, tender coffee cake crumb.
Blend the Cottage Cheese Completely
You will get the best results if you blend the cottage cheese until there are zero visible curds. It should look like smooth, thick cream before you mix it with the butter.

If you skip this step, small curds will melt into wet pockets during baking. Pureeing it completely makes the dough uniform and keeps the texture light and cakey.
Gently Swirl the Cinnamon Sugar
When you add the brown sugar and cinnamon swirl, fold the dough only two or three times. You want thick, clear ribbons running through the dough rather than blending it together.
If you mix too much, the cinnamon will tint the entire dough light brown. Leaving bold streaks gives you sweet pockets of cinnamon flavor in every single bite.

Quick Answers
Can I use 100% whey protein powder instead of a whey-casein blend?
It is best to stick with a whey-casein blend because pure whey dries out quickly when baked. The casein helps lock in moisture, which keeps these protein-packed cookies tender and cake-like.
If you only have pure whey, the cookies might turn out slightly dry, rubbery, or spread thinner on the pan.
