Cottage Cheese Turtle Cheesecake

If you love rich desserts with caramel, chocolate, and pecans, this cottage cheese turtle cheesecake is going to be a new favorite.

Rich cottage cheese turtle cheesecake

Traditional turtle cheesecake can sometimes feel a bit too heavy and dense to finish.

That is why I love using blended cottage cheese in the filling. It creates a silky, light texture that lets the sweet toppings really shine.

When you blend it completely smooth with the cream cheese, all the curds disappear and leave you with a velvety filling.

It is the kind of dessert that looks like it came from a fancy bakery, but you can easily make it right at home.

Why I Love This Recipe

Decadent Turtle Flavor – Gooey caramel, rich chocolate ganache, and toasted pecans create the ultimate candy shop flavor in every bite.

Silky Smooth Texture – Blending the cottage cheese makes the filling surprisingly velvety and light without any curds at all.

How to Make This Recipe

Step 1

Preheat the oven to 350°F and wrap the outside of a 9-inch springform pan with two layers of heavy-duty foil. Mix the graham cracker crumbs, chopped pecans, brown sugar and melted butter, press into the bottom of the pan and bake for 10 minutes.

Let it cool, reduce the oven to 325°F and bring a kettle of water to a boil.

Step 2

Blend the cottage cheese in a food processor or blender for 2 to 3 minutes, scraping down the sides, until completely silky with no curds left.

Step 3

Add the cream cheese, brown sugar, cornstarch, vanilla and salt and blend until smooth. Add the eggs and pulse just until combined, then pour the filling over the crust.

Step 4

Set the springform in a roasting pan, add hot water about 1 inch up the sides and bake for 60 to 70 minutes, until the edges are set and the center jiggles slightly.

Step 5

Turn off the oven, crack the door and let the cheesecake cool inside for 1 hour. Remove from the water bath, loosen the edge with a thin spatula, cool to room temperature and refrigerate for at least 8 hours.

Step 6

Heat the heavy cream until steaming, pour it over the chopped chocolate, let it sit for 3 minutes and stir until smooth. Let it cool and thicken slightly for about 10 minutes.

Step 7

Release the springform ring and arrange the toasted pecans over the top. Drizzle generously with the caramel sauce and chocolate, then finish with flaky sea salt.

Quick Tips

Blend the Cottage Cheese First

You’ll get the best results if you puree the cottage cheese completely on its own before adding the other ingredients.

It should look totally silky and glossy with zero curds remaining. If you rush this step, your baked cheesecake will end up with a slightly grainy texture instead of a smooth one.

Stop the blender and scrape down the sides once or twice to catch any stray curds stuck to the walls.

Bring Your Dairy to Room Temperature

From my experience, cold cream cheese creates tiny white clumps that will not smooth out, no matter how long you mix.

I recommend setting your cream cheese, cottage cheese, and eggs on the counter about an hour before you start baking.

Softened dairy blends together effortlessly, which keeps your cheesecake batter completely velvety and uniform.

Protect the Pan From Water Leaks

Springform pans are built in two pieces, which means water can easily sneak in through the base. If water gets inside, your pecan crust will turn soggy.

My favorite trick here is to use extra-wide, heavy-duty foil so a single sheet wraps up all the way around the sides without any seams.

You can also slide your foil-wrapped pan into an oven-safe roasting bag before placing it in the water bath for guaranteed protection.

Quick Answers

Will the texture be grainy from the cottage cheese?

No, the texture will be completely smooth as long as you blend the cottage cheese thoroughly before mixing in the other ingredients. Blending breaks down every curd completely, so the finished slice tastes rich and velvety just like a traditional cheesecake.
