How to Make This Recipe
Step 1
Preheat the oven to 350°F and wrap the outside of a 9-inch springform pan with two layers of heavy-duty foil. Stir together the graham cracker crumbs, sugar, salt and melted butter, then press the mixture firmly into the bottom of the pan.
Bake the crust for 10 minutes and let it cool while you make the filling. Reduce the oven to 325°F and bring a kettle of water to a boil.
Step 2
Add the cottage cheese to a food processor or blender and blend for 2 to 3 minutes, scraping down the sides, until it is completely silky with no curds left. This step is what gives the cheesecake its smooth, dense New York texture.
Step 3
Add the cream cheese, Greek yogurt, sugar, cornstarch, lemon juice, lemon zest, vanilla and salt, then blend for about 1 minute until smooth and glossy.
Add the eggs and pulse just until combined, about 5 to 6 pulses. Overmixing whips in air, which can cause cracks.
Step 4
Pour the filling over the cooled crust and tap the pan on the counter a few times to release air bubbles. Set the springform in a large roasting pan and pour hot water into the roasting pan until it reaches about 1 inch up the sides.
Bake for 60 to 70 minutes, until the edges are set and the center still wobbles slightly when you gently nudge the pan.
Step 5
While the cheesecake bakes, whisk together the Greek yogurt, powdered sugar and vanilla for the topping. When the cheesecake is done, gently spread the topping over the hot surface and return it to the oven for 8 more minutes.
Step 6
Turn off the oven, crack the door open and let the cheesecake cool inside for 1 hour. Lift it out of the water bath, remove the foil, run a thin spatula around the edge to loosen it and let it cool completely at room temperature.
Step 7
Refrigerate the cheesecake for at least 8 hours or overnight so it sets firm and the flavor develops. Release the springform ring, slice and serve cold.

Quick Tips
Blend the Cottage Cheese Until Truly Smooth
Cottage cheese gives this dessert a huge protein boost, but only if you blend it until all the little curds disappear completely.
Run your blender or food processor for a full two to three minutes. Stop and rub a tiny bit between your fingers to make sure it feels silky instead of gritty.
Taking your time here is the main secret to getting that dense, velvety New York texture without any graininess.
Protect the Crust From the Water Bath
Springform pans often let water sneak in through the bottom seam, which can make your graham cracker crust soggy.

I recommend using extra-wide, heavy-duty foil so you can wrap the bottom and sides in one single piece without seams.
If you only have regular foil, wrap the pan tightly with three overlapping layers or place the pan inside an oven-safe baking bag first.
Bring Dairy and Eggs to Room Temperature
You will get the best results if you pull your cottage cheese, cream cheese, yogurt, and eggs out of the fridge an hour before mixing.
Cold cream cheese stays in firm little lumps, while room temperature ingredients blend together easily into a glossy batter.
If you are in a rush, you can set the whole eggs in a bowl of warm water for ten minutes to take the chill off.

Quick Answers
Will this cheesecake taste like cottage cheese or have visible curds?
Not at all, because blending the cottage cheese for a few full minutes breaks down every single curd before it hits the pan.
The combination of cream cheese, vanilla, and lemon masks any curd flavor, leaving you with a rich and tangy filling that tastes just like traditional New York cheesecake.
