White chocolate macadamia nut cookies have always been one of my favorite sweet treats.
For this version, I wanted to turn them into a high protein snack that still tastes like a real bakery cookie.

The secret here is blending smooth cottage cheese right into the dough.
It adds extra moisture and richness, which keeps the center of each cookie soft and chewy without needing tons of butter.
These cottage cheese protein white chocolate macadamia cookies are simple to prepare and satisfy your sweet tooth nicely.

The Ingredients
- 3/4 cup Macadamia Nuts, Roughly Chopped
- 1/2 cup Full Fat Cottage Cheese
- 1/4 cup Unsalted Butter, Melted And Cooled
- 2/3 cup Brown Sugar
- 1 Egg Yolk
- 2 tsp Vanilla Extract
- 1 cup All-Purpose Flour
- 1/2 cup Almond Flour
- 1/2 cup Vanilla Protein Powder (Whey Casein Blend)
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 cup White Chocolate Chips
How to Make This Recipe
Step 1
Preheat the oven to 350°F. Spread the chopped macadamia nuts on a baking sheet and toast for 6 to 8 minutes, until lightly golden and fragrant, then let them cool.
Step 2
Blend the cottage cheese until completely smooth. In a large bowl, whisk the blended cottage cheese, melted butter, brown sugar, egg yolk and vanilla until glossy.
Step 3
Add the all-purpose flour, almond flour, protein powder, baking soda and salt, and stir until combined. Fold in the toasted macadamia nuts and white chocolate chips, then cover and chill for 30 minutes.
Step 4
Line 2 baking sheets with parchment paper. Scoop the dough into 2 tablespoon balls, place them 2 inches apart and press a few extra white chocolate chips on top if you like.
Step 5
Bake for 10 to 12 minutes, until the edges are golden and the centers look slightly underbaked. The almond flour and cottage cheese keep the centers rich and chewy.
Step 6
Cool on the baking sheets for 10 minutes, then move to a wire rack.

Quick Tips
Stick to a Whey-Casein Blend
I recommend using a whey-casein blend rather than pure whey protein powder. Pure whey tends to make baked treats dry or rubbery, but casein holds onto moisture and acts more like regular flour.
This specific blend keeps the centers soft and chewy while delivering a great protein boost in every single cookie.
Blend the Cottage Cheese Until Completely Smooth
You’ll get the best results if you blend the cottage cheese in a small blender until every single curd disappears.

Any leftover curds will create small pockets of moisture in the dough, which keeps the cookies from baking evenly. A silky smooth puree mixes cleanly with the butter to create a rich, uniform dough.
Let the Macadamia Nuts Cool Completely
From my experience, you should never fold the toasted nuts into the dough while they are still warm.
The trapped heat from the nuts will melt the white chocolate chips on contact and make the dough oily. Spread them out on a plate so they cool down to room temperature before you mix them in.

Quick Answers
Can I use low-fat cottage cheese instead of full-fat?
You can use low-fat cottage cheese, but full-fat cottage cheese gives the dough the best moisture and rich flavor.
If you use fat-free cottage cheese, drain off any excess liquid first so the cookie dough does not become too wet.
