If you want a special breakfast that looks impressive without a lot of work, this cottage cheese protein lemon dutch baby is for you.
A dutch baby is basically a giant, puffed pancake baked in a skillet, and this version is high protein so it keeps you full for hours.

Blending cottage cheese right into the batter makes the middle soft and custardy, while keeping the edges nice and crisp.
You do not taste curds at all because blending makes everything completely smooth and rich.
Topped with a quick lemon cream and fresh berries, it is one of my favorite morning meals to make on the weekend.
Why I Love This Recipe
High in Protein – Blending cottage cheese into the batter and topping adds great protein to keep you full all morning.
Incredible Custardy Texture – You get super crispy, tall edges with a soft, warm custardy middle that melts in your mouth.

Bright Lemon Flavor – Fresh zest cuts right through the richness to give every bite a sunny, refreshing burst of citrus.
Effortless Blender Batter – Just dump the ingredients into a blender, blitz for forty seconds, and pour it into the hot pan.

How to Make This Recipe
Step 1
Place a 10-inch cast iron skillet in the oven and preheat to 425°F. Let the skillet heat for at least 10 minutes once the oven reaches temperature.
Step 2
Add the eggs, cottage cheese, milk, flour, sugar, salt, vanilla extract and lemon zest to a blender. Blend for 30 to 45 seconds until completely smooth, then let the batter rest while the skillet heats.
Step 3
Carefully remove the hot skillet, add the butter and swirl until melted and foaming.
Step 4
Pour the batter into the center of the skillet and return it to the oven right away. Bake for 18 to 20 minutes without opening the door, until dramatically puffed and deep golden at the edges.
Step 5
While it bakes, blend the cottage cheese, honey and lemon zest until smooth and creamy.
Step 6
Serve immediately, as it will gently fall. Spoon the lemon cream into the center, add blueberries, dust with powdered sugar and finish with a squeeze of lemon juice.

Quick Tips
Use Room Temperature Ingredients
From my experience, taking your eggs, milk, and cottage cheese out of the fridge about thirty minutes early makes a huge difference.
Cold ingredients will cool down your hot skillet too quickly. Room temperature batter creates the instant steam you need to get that tall, dramatic rise.
Blend the Batter Until Completely Smooth
Cottage cheese gives this breakfast a great protein boost, but you need to make sure there are no visible curds left in the batter.

If the curds stay whole, their extra weight will keep the pancake from puffing up nicely.
I recommend running the blender on high until the batter looks like smooth, light cream.
Make Sure the Skillet Is Truly Hot
You’ll get the best results if you let your cast iron skillet sit inside the preheating oven for at least ten to fifteen minutes.
The pan needs to be scorching hot the second the batter hits the surface. That intense heat is what forces the edges to crawl up the sides of the skillet.

Quick Answers
Will the cottage cheese leave lumps in the baked pancake?
No, blending the batter thoroughly breaks down the curds and creates an ultra-smooth consistency.
This step allows you to enjoy a naturally protein-packed breakfast without any grainy cottage cheese texture.
