- 1/4 cup Plain Greek Yogurt

How to Make This Recipe
Step 1
Add the blueberries, maple syrup, and lemon juice to a small saucepan. Cook over medium heat for 4 minutes, stirring occasionally, until the berries release their juices.
Step 2
Stir together the cornstarch and water. Add it to the blueberries and simmer for 1 minute, until the compote is glossy and lightly thickened.
Step 3
Blend the cottage cheese, Greek yogurt, maple syrup, and lemon zest for the lemon cream until silky. Refrigerate until serving.

Blend the cottage cheese, eggs, milk, maple syrup, lemon juice, and lemon zest for the pancakes until smooth.

Quick Tips
Blend the Cottage Cheese Until Fully Smooth
The whole point of blending the cottage cheese with the eggs and milk is to break down all those little curds. If you stop too early, you’ll get lumpy pancakes with weird chewy bits inside.
From my experience, blend for a solid 30 to 45 seconds until the mixture looks completely silky and pourable. Scrape down the sides once and give it another quick blend to catch anything stuck up high.
These pancakes are packed with protein from the cottage cheese, eggs, and protein powder, so getting that base smooth makes the whole batch turn out soft and even.
Let the Batter Rest the Full 5 Minutes
Oat flour and protein powder both need a little time to soak up the liquid. If you skip the rest, the batter will be too thin and your pancakes will spread out flat and thin.

My favorite trick here is to use that resting time to heat the pan and get the compote going. After 5 minutes the batter thickens up nicely and holds its shape when you pour it.
Keep the Heat on Medium-Low
This is the biggest thing that goes wrong with these pancakes. Protein powder and oat flour brown much faster than regular flour, so if the pan is too hot the outside burns before the inside cooks through.
You’ll get the best results if you keep it on medium-low the whole time. If the first pancake browns too fast or stays raw in the middle, adjust the heat before you pour the next one.
