Mornings can get pretty busy, so having a filling meal ready to go makes a big difference.

That is why I love making these cottage cheese protein chorizo breakfast burritos ahead of time.
Blending cottage cheese into the eggs is the secret trick here. It creates a creamy, fluffy texture and stops the eggs from drying out when you reheat them.

You also get plenty of rich flavor from the chorizo, and this recipe is naturally high protein to help keep you full until lunch.
You can roll them up, toast them in a skillet, and keep them in the freezer whenever you need a quick hot meal.
Why I Love This Recipe
High Protein Fuel – Packed with eggs, chorizo, and cottage cheese, each burrito gives you massive protein to fuel your morning.
Ultra Fluffy Texture – Blending cottage cheese into the eggs makes them unbelievably soft, creamy, and velvety smooth.

Perfect for Reheating – The cottage cheese prevents the eggs from drying out or turning rubbery when you warm them up.
Bold Morning Flavor – Zesty Mexican chorizo and melted cheese deliver rich, savory flavors that wake up your taste buds instantly.
The Ingredients
- 8 Large Eggs
- 3/4 cup Full-Fat Cottage Cheese
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 8 oz Fresh Mexican Chorizo
- 1/2 Red Bell Pepper, Diced
- 4 Large Flour Tortillas (10 Inch)
- 1 cup Mexican Blend Cheese, Shredded
- 1/4 cup Salsa
- 2 tbsp Fresh Cilantro, Chopped
How to Make This Recipe
Step 1
Add the eggs, cottage cheese, salt and pepper to a blender and blend until mostly smooth. This creates extra fluffy, creamy eggs that stay soft even after reheating.
Step 2
Cook the chorizo in a large nonstick skillet over medium heat, breaking it up, for 6 to 7 minutes until browned. Add the bell pepper and cook for 2 to 3 minutes more. Transfer to a bowl, leaving about 1 tablespoon of fat in the pan.
Step 3
Reduce the heat to medium-low and pour in the egg mixture. Stir gently with a spatula until soft curds form and the eggs are just set, 3 to 4 minutes. Fold in the chorizo mixture.
Step 4
Warm the tortillas so they are flexible. Sprinkle cheese down the center of each one, top with the egg filling, salsa and cilantro, then fold in the sides and roll tightly.
Step 5
Wipe out the skillet and place the burritos seam side down over medium heat. Cook for about 2 minutes per side until golden and sealed.
Step 6
Serve right away, or cool completely, wrap each burrito in foil and freeze for easy weekday breakfasts.

Quick Tips
Blend the Eggs Until Completely Smooth
I recommend running your blender until you do not see any white specks of cottage cheese left in the bowl.
Blending thoroughly whips air into the mixture, which gives you soft, fluffy curds when cooked. It also lets you sneak in a big protein boost without changing the classic scrambled egg texture.
Drain the Extra Chorizo Grease
Fresh Mexican chorizo releases a lot of reddish oil as it browns in the pan.

From my experience, you should spoon out most of this liquid and leave just one tablespoon behind. If you leave too much fat in the skillet, your scrambled eggs will end up greasy and the tortillas can turn soggy.
Cook the Eggs on Low Heat
You will get the best results if you keep the skillet heat down at medium-low when you pour in the eggs.
Because the cottage cheese adds extra liquid, high heat can cause the mixture to separate and turn watery. Stir gently and remove the pan from the stove while the curds are still soft and glossy.

Quick Answers
Will the eggs taste like cottage cheese?
No, blending the cottage cheese with the eggs completely smooths out the curds so you will not taste or feel it at all.
It gives you a rich, high-protein boost while keeping the scrambled eggs fluffy and tender even after reheating.
