Healthy cottage cheese deviled eggs

The cottage cheese is the real star here. Once you blend it with the yolks, it turns super smooth and gives the filling a light, fluffy texture.

It also adds a nice tang that works really well with the mustard and lemon juice.

Since these are made with eggs and cottage cheese, they are high in protein too. That makes them a great snack or party appetizer that actually keeps you full.

Quick Tips

Use Eggs of Similar Size

Use large eggs that are close to the same size so the whites and yolks finish at the same time. Starting with cold water also helps the eggs warm up evenly instead of cooking too quickly on the outside.

Once the water reaches a full boil, cover the pan and move it off the heat right away. Letting the eggs sit for the full 11 minutes gives you firm yolks that blend into a smooth, protein-rich filling.

Keep the ice bath ready before the eggs are done. Cooling them for the full 10 minutes stops the cooking and helps prevent a gray ring around the yolks.

Peel the Eggs While Cool

For easier peeling, gently tap each cooled egg all over its shell, then peel it under a thin stream of cool water. The water can help loosen small shell pieces from the egg white.

Wholesome cottage cheese deviled eggs

Older eggs usually peel more cleanly than very fresh eggs. If a few whites get rough spots, place those halves toward the center of the platter where they will be less noticeable.

Drain the Cottage Cheese Well

Drain the cottage cheese in a fine mesh strainer for at least 10 minutes before blending. Whole milk cottage cheese has more moisture than yolks need, and extra liquid can make the filling too soft for piping.

If your cottage cheese still looks wet after draining, blot it lightly with a paper towel. This keeps the filling thick, creamy, and able to hold a neat swirl in each egg white.
