Fluffy cottage cheese chocolate muffin

Because this recipe is high protein, it works really well for a fast breakfast or an easy snack before a workout.

The best part is the cottage cheese blended straight into the batter. It gives the muffins an amazingly soft and moist texture that does not dry out.

You will never taste the curds, but you get all the benefits of a tender muffin that stays fresh for days.

Why I Love This Recipe

Candy Bar Flavor – You get the iconic taste of rich dark chocolate, sweet coconut, and toasted almonds in every single bite.

  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 1/2 cups Full Fat Cottage Cheese, Room Temperature
  • 2 Large Eggs, Room Temperature
  • 1/2 cup Light Brown Sugar
  • 1/3 cup Canned Coconut Milk
  • 1 tsp Vanilla Extract
  • 1/2 tsp Coconut Extract

  • 1/2 cup Toasted Almonds, Chopped & Divided
  • 1/3 cup Dark Chocolate Chips, For Drizzle

How to Make This Recipe

Step 1

Preheat the oven to 375°F and line a 12-cup muffin tin with paper liners, then lightly spray the liners with cooking spray.

Step 2

In a large bowl, whisk together the flour, protein powder, 1/2 cup coconut, baking powder, baking soda and salt.

Step 3

Blend the cottage cheese, eggs, brown sugar, coconut milk, vanilla and coconut extract until smooth. With the blender running, slowly pour in the melted coconut oil so it mixes in evenly without clumping.

Step 4

Fold the wet mixture into the dry ingredients until combined, then fold in the chocolate chips and most of the almonds. Let the batter rest for 5 minutes so the coconut softens.

Step 5

Divide the batter among the cups and top with the remaining 2 tablespoons coconut and almonds.

Step 6

Bake for 18-21 minutes, until the coconut on top is toasted and a toothpick comes out clean. Cool completely on a wire rack.

Step 7

Melt the chocolate chips for the drizzle in the microwave in 20-second bursts, stirring until smooth. Drizzle over the muffins and let set.

Quick Tips

Choose the Right Protein Powder

I recommend using a whey-casein blend or a baking-friendly vanilla protein powder. Pure whey isolate tends to dry out in the oven and can make your muffins feel dense or rubbery.

A blend holds onto moisture much better and gives you a soft, tender crumb. It is an easy way to pack extra protein into a sweet treat without sacrificing that light bakery texture.

Bring the Cold Ingredients to Room Temperature

Make sure your cottage cheese and eggs sit out on the counter before you start mixing. If they are straight out of the fridge, the melted coconut oil will harden into little beads as soon as it hits them.

From my experience, having everything at room temperature ensures the oil blends smoothly. This gives your batter an even, velvety texture with no oily streaks or solid clumps.

Blend Until the Curds Vanish Completely

Run your blender until the wet mixture looks completely silky and smooth. You do not want any visible white curds left behind in the liquid.

Taking that extra minute to blend thoroughly transforms the cottage cheese into a rich, creamy base. This keeps the inside of the muffins soft without anyone guessing there is cottage cheese in them.

Quick Answers

Why do the cottage cheese and eggs need to be at room temperature?

If your wet ingredients are cold, they will cause the melted coconut oil to solidify and create tiny hardened chunks in your blender. Keeping them at room temperature helps the melted oil blend smoothly into the mixture.
