Cottage Cheese Protein Banana Caramel Pancakes

These cottage cheese protein banana caramel pancakes are one of my favorite ways to start the day. They taste like a treat but still keep you full for hours.

The secret here is the cottage cheese. When you blend it into the batter, it makes the pancakes soft and moist without any lumps.

It also adds a nice creaminess and gives these pancakes a real protein boost, so this is a proper high protein breakfast.

Then there is the banana caramel on top. Warm, sweet, and just a little sticky, it turns a simple stack into something special.

If you want a breakfast that feels like dessert but still does you good, give these a try.

Why I Love This Recipe

Packed With Protein – These pancakes use cottage cheese, eggs, and protein powder, so each stack keeps you full and fueled for hours.

Soft and Fluffy Texture – Blending the cottage cheese makes the batter super smooth, giving you light, tender pancakes every single time.

That Warm Caramel Topping – Sweet caramelized bananas melt into a glossy sauce that turns simple pancakes into a real treat.

Naturally Sweetened Flavor – Ripe bananas add gentle sweetness to the batter, so you get big flavor without piling on extra sugar.

How to Make This Recipe

Step 1

Blend the cottage cheese, eggs, mashed banana, milk, and vanilla until smooth.

Step 2

Whisk the oat flour, vanilla protein powder, baking powder, cinnamon, and salt in a mixing bowl. Stir in the cottage cheese mixture and rest the batter for 5 minutes.

Step 3

Separate the two bananas into thick coins. Melt the butter in a skillet over medium heat, then arrange the banana coins in a single layer.

Step 4

Sprinkle the brown sugar, cinnamon, and salt over the bananas. Add the water and cook for 2 to 3 minutes, gently turning the bananas once, until glossy and caramelized.

Step 5

Heat a nonstick skillet over medium-low heat and add a thin portion of the avocado oil. Spoon 1/4 cup batter into the skillet for each pancake.

Step 6

Cook for 2 to 3 minutes, until the undersides are golden and the tops begin to bubble. Turn and cook for 1 to 2 minutes, using the remaining oil for later batches.

Step 7

Serve the cottage cheese pancakes warm with the banana caramel and its sauce spooned over each stack.

Quick Tips

Blend the Batter Until Totally Smooth

The cottage cheese needs to be fully blended so you don’t end up with lumps in your finished pancakes. Keep the blender going until the mixture looks completely creamy with no curds visible.

From my experience, this step is what makes these pancakes taste like normal pancakes instead of having that grainy cottage cheese texture. Don’t rush it.

Use Really Ripe Bananas

Both in the batter and for the caramel, you want bananas with plenty of brown spots on the peel. The riper they are, the sweeter and softer they get.

Green or barely yellow bananas won’t mash smoothly and they won’t caramelize nicely either. I’ve found that spotty, almost overripe bananas give you the best flavor and natural sweetness.

Don’t Skip the 5 Minute Rest

After you mix the wet and dry together, let the batter sit for the full 5 minutes before cooking. This gives the oat flour and protein powder time to soak up the liquid.

My favorite trick here is using this rest to let the baking powder activate too, which helps the pancakes puff up. The batter will thicken a little, and that’s exactly what you want.

If you cook it right away, the pancakes come out thinner and less fluffy.

Quick Answers

Can I make these without protein powder?

Yes, you can leave out the protein powder, but you’ll want to add an extra 1/4 cup of oat flour to keep the batter thick enough to hold its shape.

Just remember that skipping the powder means the pancakes won’t be as protein rich, so add it back in whenever you want that extra boost.
