How to Make This Recipe
Step 1

Quick Tips
Blend the Batter Until Totally Smooth
The cottage cheese needs to be fully blended so you don’t end up with lumps in your finished pancakes. Keep the blender going until the mixture looks completely creamy with no curds visible.
From my experience, this step is what makes these pancakes taste like normal pancakes instead of having that grainy cottage cheese texture. Don’t rush it.
Use Really Ripe Bananas
Both in the batter and for the caramel, you want bananas with plenty of brown spots on the peel. The riper they are, the sweeter and softer they get.

Green or barely yellow bananas won’t mash smoothly and they won’t caramelize nicely either. I’ve found that spotty, almost overripe bananas give you the best flavor and natural sweetness.
Don’t Skip the 5 Minute Rest
After you mix the wet and dry together, let the batter sit for the full 5 minutes before cooking. This gives the oat flour and protein powder time to soak up the liquid.
My favorite trick here is using this rest to let the baking powder activate too, which helps the pancakes puff up. The batter will thicken a little, and that’s exactly what you want.
