Cottage Cheese Apple Cinnamon Oat Bars

These cottage cheese apple cinnamon oat bars are one of my favorite easy snacks to keep around during the week.

They taste like a soft baked oatmeal cookie, but they hold together well and feel more filling.

Sweet apple cinnamon oat squares

The cottage cheese is the secret here. It blends right into the batter and keeps the bars moist and tender without making them heavy.

You also get little bits of apple in every square, along with a warm hint of cinnamon.

They come together in one bowl and a blender, and the oven does most of the work for you.

Let me show you how simple these are to make at home.

Why I Love This Recipe

Cozy Fall Flavor – Warm cinnamon and sweet apple in every bite taste just like a slice of apple pie.

Soft and Chewy Texture – The oats and cottage cheese bake into a tender, hearty bar that holds together perfectly.

Naturally Sweetened – Maple syrup and applesauce add gentle sweetness without any refined sugar at all.

Great for Meal Prep – Make a batch on Sunday and enjoy grab-and-go squares all week long.

Quick Tips

Blend the Cottage Cheese Until Fully Smooth

Take your time with this step and blend the cottage cheese mixture until it’s completely smooth with no lumps left.

Cottage cheese has those little curds, and if you don’t break them down, you’ll get pockets of it in your finished bars instead of a smooth, even texture.

Scrape down the sides of the blender once or twice to make sure everything gets mixed in.

Dice the Apple Small

Cut your apple into really small pieces, about the size of a pea. Big chunks stay too firm and make the bars hard to cut into clean squares.

Small pieces also spread through the batter better, so you get a little bit of apple in every bite instead of some squares having all of it.

I like to leave the skin on for extra texture and color, but you can peel it if you prefer softer bars.

Press the Mixture Down Firmly

When you add the batter to the pan, press it down hard and even it out with the back of a spoon or your hands.

This batter won’t spread on its own like a cake, so whatever shape you press it into is the shape it stays.

Pressing firmly also helps the bars hold together once they’re baked, so they don’t crumble apart when you cut them.

Quick Answers

What kind of apple works best for these bars?

Firmer apples like Honeycrisp, Fuji, or Gala are great because they hold their shape and stay a little juicy after baking.

Softer apples can turn mushy and make the bars wetter, so if that’s all you have, dice them a bit smaller so they cook down evenly.
