If you love cheesecake but want something lighter, my cottage cheese blueberry swirl mini cheesecakes are a great option to try.
Standard cheesecake can sometimes feel a bit too heavy, which is why I like using cottage cheese in the batter.

Blending it until silky gives the filling a wonderfully light and creamy texture that melts in your mouth.
The homemade blueberry sauce swirled on top adds a lovely pop of sweet and tart berry flavor.
I also love making these in a muffin tin because they bake fast and come out in perfect individual portions.
Why I Love This Recipe
Silky Smooth Texture – Blending the cottage cheese creates a velvety filling that rivals any classic bakery cheesecake.
Lighter Than Traditional – Using cottage cheese cuts down on heavy cream cheese while keeping every single bite rich.

Fresh Berry Flavor – Homemade blueberry sauce adds a sweet, tart pop that pairs beautifully with the creamy filling.
Perfect Individual Portions – Baking them in a muffin pan gives you twelve neatly pre-portioned treats ready to serve.

How to Make This Recipe
Step 1
Cook the blueberries, sugar and lemon juice in a small saucepan over medium heat for about 5 minutes, until the berries burst. Stir the cornstarch into the water, add it to the pan and simmer for 1 minute until thick, then let the sauce cool completely.
Step 2
Preheat the oven to 325°F, place a pan of hot water on the lower rack and line a 12-cup muffin pan with paper liners. Mix the graham cracker crumbs, sugar and melted butter, press 1 heaping tablespoon into each liner and bake for 5 minutes.
Step 3
Blend the cottage cheese in a food processor or blender for 2 to 3 minutes, scraping down the sides, until completely silky.
Step 4
Add the cream cheese, sugar, cornstarch, vanilla and lemon zest and blend until smooth. Add the eggs and pulse just until combined.
Step 5
Divide the filling among the liners, filling each almost to the top. Drop 1 teaspoon of blueberry sauce onto each one and swirl it gently with a toothpick.
Step 6
Bake for 20 to 23 minutes, until the edges are set and the centers wobble slightly. Turn off the oven, crack the door and let them cool inside for 15 minutes.
Step 7
Cool completely at room temperature, then refrigerate for at least 4 hours. Spoon the remaining blueberry sauce over the tops just before serving.

Quick Tips
Blend the Cottage Cheese Thoroughly
I recommend blending the cottage cheese by itself until it looks completely glossy and smooth before adding anything else.
If you rush this step, tiny curds will remain in the batter and give your mini cheesecakes a grainy texture.
Stop the blender once or twice to scrape down the sides so every bit gets fully pureed.
Cool the Blueberry Sauce Completely
From my experience, you should make the blueberry sauce first so it has plenty of time to chill down before you start on the batter.

If the sauce is still warm when you drop it on top, it will sink straight to the bottom of the cup instead of floating on the surface.
A completely cooled sauce is thicker and much easier to drag into clean, pretty swirls.
Press the Graham Cracker Crust Firmly
My favorite trick here is using the flat bottom of a small spice jar or shot glass to pack the crumbs down evenly.
Pressing firmly keeps the crust compact so it does not crumble or float up into the cheesecake mixture when you fill the cups.

Quick Answers
Will the cheesecake filling turn out grainy because of the cottage cheese curds?
No, blending the cottage cheese for a full two to three minutes completely breaks down the curds into a silky cream.
As long as you scrape down the sides of the bowl while blending, the baked texture will turn out just as velvety as classic cheesecake.
