How to Make This Recipe

Step 1

Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment, leaving an overhang on two sides. Mix the graham cracker crumbs, brown sugar and melted butter, press into the pan and bake for 10 minutes. Reduce the oven to 325°F.

Step 2

Melt the butter in a skillet over medium heat, add the diced apples, brown sugar and cinnamon and cook for 5 to 6 minutes until tender and the juices have cooked off. Let the apples cool slightly.

Step 3

In a bowl, mix the flour, oats, brown sugar and cinnamon for the streusel. Rub in the cold butter with your fingertips until it forms pea-sized clumps, then refrigerate until needed.

Step 4

Blend the cottage cheese in a food processor or blender for 2 to 3 minutes, scraping down the sides, until completely silky.

Step 5

Add the cream cheese, sugar, cornstarch and vanilla and blend until smooth. Add the eggs and pulse just until combined.

Step 6

Pour the cheesecake batter over the crust, scatter the cooked apples evenly on top and sprinkle with the streusel. Bake for 45 to 50 minutes, until the streusel is golden and the center has a slight wobble.

Step 7

Cool completely in the pan, then refrigerate for at least 4 hours. Lift out using the parchment, cut into 16 bars, drizzle with caramel sauce and finish with a pinch of flaky sea salt.

Quick Tips

Blend the Cottage Cheese Completely Smooth

From my experience, blending the cottage cheese by itself before adding the other ingredients makes a huge difference. You want to run the blender or food processor until every single curd vanishes.

If you rush this step, your cheesecake filling will have a gritty texture instead of coming out silky and creamy.

Cook Out the Apple Juices Completely

You’ll get the best results if you let the apples cook until the skillet is totally dry. Honeycrisp apples hold a lot of water, and extra liquid will make the cheesecake layer soggy underneath.

I also recommend letting the cooked apples cool before scattering them on top. Warm apples will soften the batter and sink straight to the crust.

Chill Your Streusel Before Baking

My favorite trick here is to keep the bowl of streusel in the fridge while you make the filling. The butter needs to stay firm so it bakes into crisp, distinct oat clusters.

If the butter gets soft at room temperature, the streusel turns into an oily paste that melts into the cheesecake rather than staying crunchy on top.

Quick Answers

Will the cottage cheese leave lumps or curds in the cheesecake layer?

Blending the cottage cheese for the full 2 to 3 minutes completely smooths it out into a silky cream.

Once baked, the texture becomes just as velvety and uniform as traditional cream cheese.
