Cottage Cheese Protein Espresso Chip Ice Cream

I love having coffee in the afternoon, but sometimes I want something cold and sweet instead of a regular hot cup.

Coffee protein ice cream with chocolate bits

That is how I came up with this cottage cheese protein espresso chip ice cream.

Using cottage cheese as the base gives it an ultra-smooth, creamy texture without needing an ice cream maker. It also makes this a high protein dessert that keeps you satisfied.

You cannot taste the cheese at all once it blends with the rich espresso and crunchy bits of dark chocolate.

It is very simple to make at home, and all you need is a blender and a chilled pan for the freezer.

Why I Love This Recipe

High Protein Treat – Packed with real cottage cheese, each bowl delivers plenty of protein to keep you feeling full and energized.

Bold Coffee Flavor – Dissolved espresso powder gives every scoop a deep, robust coffee taste that true coffee lovers will adore.

No Ice Cream Maker Needed – You only need a blender and a standard hand mixer to make this fantastic frozen dessert at home.

Ultra Silky Texture – Whipped heavy cream folded into smooth cottage cheese creates an incredibly soft, rich, and scoopable treat.

The Ingredients

  • 1 1/2 tbsp Instant Espresso Powder
  • 1 tbsp Hot Water
  • 3 cups Full Fat Cottage Cheese
  • 1/2 cup Sweetened Condensed Milk
  • 3 tbsp Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/8 tsp Salt
  • 1 cup Heavy Cream, Cold
  • 3 oz Dark Chocolate, Finely Chopped

How to Make This Recipe

Step 1

Place a 9×5-inch loaf pan in the freezer to chill. Stir the instant espresso powder into the hot water until fully dissolved.

Step 2

Add the cottage cheese, sweetened condensed milk, maple syrup, dissolved espresso, vanilla and salt to a high-speed blender. Blend for 1 to 2 minutes until completely smooth and silky, with a rich coffee color.

Step 3

In a large chilled bowl, whip the heavy cream with a hand mixer until stiff peaks form, about 2 to 3 minutes.

Step 4

Stir a large spoonful of the coffee mixture into the whipped cream to lighten it. Gently fold in the rest until smooth and evenly colored.

Step 5

Set aside 2 tablespoons of the chopped chocolate. Fold the rest into the ice cream base.

Step 6

Spread the mixture into the chilled pan and sprinkle the reserved chocolate on top. Press plastic wrap onto the surface and freeze for at least 6 hours or overnight.

Step 7

Soften at room temperature for 10 minutes before scooping. For a café-style treat, pour a hot shot of espresso over a scoop and serve right away.

Quick Tips

Blend Until the Curds Completely Vanish

Blend the cottage cheese mixture for the full two minutes so every last curd disappears. You want the base to look completely glossy and silky before you move on.

Using cottage cheese gives this treat an incredible protein boost without needing any chalky protein powders. It creates a rich, custard-like base that rivals traditional churned ice cream.

If you stop blending too early, those tiny curds will freeze into icy little specks instead of staying creamy.

Let the Espresso Cool Before Blending

After you dissolve the espresso powder in hot water, give it a few minutes to cool down before pouring it into the blender.

Adding hot liquid directly to cold dairy can thin out the mixture and warm up the base. You’ll get the best results if the liquid drops to room temperature first.

I’ve found that cooled espresso blends in seamlessly and keeps the mixture thick and smooth.

Whip the Cream in a Chilled Bowl

Put your mixing bowl and beaters in the freezer for about 10 minutes before whipping the heavy cream.

Cold equipment helps the cream whip up much faster and hold sturdy, stiff peaks. Warm cream often struggles to reach the right volume.

This trapped air is what keeps your frozen dessert light and scoopable instead of turning into a dense block.

Quick Answers

Will this ice cream taste like cottage cheese or have a lumpy texture?

Blending the base in a high-speed blender completely breaks down the curds until it is silky smooth.

The bold espresso and sweet condensed milk easily cover any mild tang, so it simply tastes like classic coffee ice cream.
