Cottage Cheese Protein Ham & Cheese Breakfast Pockets

Busy mornings can make it hard to sit down and enjoy a warm, filling meal.

That is why I love making these homemade cottage cheese protein ham & cheese breakfast pockets ahead of time.

Fresh baked ham and cheese protein pockets

This recipe is high protein, so it gives you plenty of steady energy to start your day off right.

Using cottage cheese in the dough is the real trick here because it creates a wonderfully soft, tender crust without needing lots of butter.

I also stir a spoonful into the scrambled eggs to keep the filling creamy and rich.

Why I Love This Recipe

High Protein Powerhouse – Packed with cottage cheese, eggs, and ham, each hearty pocket keeps you full and energized all morning.

Flaky Two-Ingredient Crust – The blended cottage cheese dough bakes up miraculously golden, soft, and tender without needing any yeast.

The Ingredients

For the Filling

  • 5 Large Eggs
  • 1/4 cup Full-Fat Cottage Cheese
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Butter
  • 4 oz Ham, Diced
  • 3/4 cup Cheddar Cheese, Shredded
  • 1 tbsp Fresh Chives, Chopped

For the Dough

  • 1 1/4 cups Full-Fat Cottage Cheese
  • 1 3/4 cups All-Purpose Flour, Plus More For Dusting
  • 2 1/2 tsp Baking Powder
  • 1/2 tsp Salt

For Brushing

  • 1 Large Egg, Beaten

How to Make This Recipe

Step 1

Preheat the oven to 400°F and line a baking sheet with parchment paper.

Step 2

Whisk the eggs, cottage cheese, salt and pepper. Melt the butter in a nonstick skillet over medium-low heat and cook the eggs, stirring gently, until soft and just barely set. Let them cool for 10 minutes, then stir in the ham, cheddar and chives.

Step 3

Blend the cottage cheese for the dough until smooth. In a large bowl, whisk the flour, baking powder and salt, then stir in the blended cottage cheese until a shaggy dough forms.

Turn the dough out onto a floured surface and knead for about 1 minute until smooth and only slightly tacky.

Step 4

Divide the dough into 6 pieces and roll each into a 6-inch circle.

Step 5

Spoon the filling onto one half of each circle, fold the dough over and press the edges together with a fork to seal. Place on the baking sheet, brush with beaten egg and cut a small slit in the top of each pocket.

Step 6

Bake for 20 to 22 minutes, until puffed and deep golden. Let them cool for 5 minutes before serving.

Quick Tips

Blend the Cottage Cheese Completely Smooth

I recommend blending the cottage cheese until it looks totally silky and smooth, just like sour cream. Make sure there are no visible curds left before you mix it with the flour.

If you leave tiny lumps behind, they will melt into wet spots while baking. That can make your dough overly sticky to roll out and cause weak spots in your pockets.

Undercook the Scrambled Eggs Slightly

When you scramble your eggs in the pan, pull them off the heat while they still look wet and glossy. They should just barely hold together.

Remember that the eggs will bake again inside the pocket for over twenty minutes. If you cook them all the way in the skillet, they will turn dry and rubbery inside the oven.

Always Let the Filling Cool Down

I’ve found that placing warm eggs directly onto the rolled dough softens it way too quickly. The heat makes the dough sticky and very difficult to fold without tearing.

Let the cooked egg mixture sit on the counter for about ten minutes before you stir in the cheese. This keeps your dough firm and easy to shape.

Quick Answers

Can I freeze these breakfast pockets for meal prep?

Yes, these pockets freeze well and make a wonderful grab-and-go meal prep option. Having them ready in your freezer gives you an easy, protein packed breakfast on busy weekday mornings.

Let the baked pockets cool completely, wrap each one tightly, and freeze for up to two months. Warm them up in an oven or toaster oven so the crust stays crisp.
