They have a soft, spiced pumpkin base and a rich cheesecake center that tastes like real dessert.

Spiced pumpkin cookies with cheesecake swirl

The secret to that creamy swirl is blended cottage cheese. It replaces heavy cream cheese, giving the center a light and silky texture without feeling too heavy.

Because I added protein powder and cottage cheese, this recipe is high protein and much more satisfying than your typical cookie.

They are simple to prepare, and chilling them in the fridge makes the cheesecake layer even better.

Why I Love This Recipe

Protein-Packed Treat – These cookies pack a wholesome punch of protein from blended cottage cheese and quality protein powder.

Two Desserts in One – You get soft spiced pumpkin cookies and creamy baked cheesecake all in a single bite.

The Ingredients

For the Pumpkin Cookies

  • 1/2 cup Pumpkin Puree
  • 1/4 cup Unsalted Butter, Melted
  • 1/2 cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Vanilla Protein Powder (Whey Casein Blend)
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt

For the Cheesecake Swirl

  • 3/4 cup Full Fat Cottage Cheese
  • 1 Egg Yolk
  • 3 tbsp Granulated Sugar
  • 1 tbsp Cornstarch
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Ground Cinnamon

How to Make This Recipe

Step 1

In a large bowl, whisk the pumpkin puree, melted butter, brown sugar and vanilla until smooth.

Step 2

Add the flour, protein powder, pumpkin pie spice, baking powder, baking soda and salt, and stir until a soft dough forms. Cover and chill for 30 minutes.

Step 3

Meanwhile, blend the cottage cheese, egg yolk, sugar, cornstarch and vanilla until completely smooth and silky. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.

Step 4

Scoop the dough into 16 balls, about 2 tablespoons each, and place them 2 inches apart. Flatten each ball to 1/2 inch thick and press a wide, shallow well into the center with the back of a spoon.

Step 5

Spoon about 2 teaspoons of the cheesecake mixture into each well. Drag a toothpick through the filling and slightly into the dough to create a swirl, then dust lightly with cinnamon.

Step 6

Bake for 13 to 15 minutes, until the cookies are set and the cheesecake swirl no longer looks wet.

Step 7

Cool on the baking sheets for 10 minutes, then move to a wire rack. Chill for 30 minutes for a firmer cheesecake swirl, and store in the fridge.

Quick Tips

Stick to a Whey-Casein Blend

I recommend sticking with a whey-casein blend rather than using pure whey protein powder. Whey alone tends to dry out when baked, but casein holds onto moisture and keeps these high protein cookies soft and tender.

It gives you an easy protein boost in every treat without that dry, spongy texture that can sometimes happen in fitness baking.

If you only have pure whey on hand, keep a close eye on the oven and check the cookies a couple of minutes early so they do not overbake.

Blot Your Pumpkin Puree

From my experience, canned pumpkin often carries a lot of extra water that can thin out your dough.

You’ll get the best results if you lightly press the pumpkin puree between a few paper towels before measuring it into your mixing bowl.

Removing that excess liquid keeps the dough from turning overly sticky and gives the cookies a soft, chewy bite instead of a soggy one.

Blend the Cottage Cheese Until Silky

Make sure to use a small blender or food processor for the swirl filling instead of just stirring it with a fork.

Cottage cheese curds will not melt down on their own in the oven. Blending until totally smooth gives you that authentic, velvety cheesecake texture.

Quick Answers

Can I use 100% whey protein powder instead of a whey-casein blend?

You can use 100% whey if that is what you have, but a blend gives a much softer texture because pure whey can make baked cookies dry and rubbery.

Using a whey-casein blend keeps the cookies tender and cakey while providing a wonderful protein boost in every bite.
