I love baking sweet treats that keep me full, and these cottage cheese protein tahini chocolate chip cookies are one of my new favorites.
They are naturally high protein, which makes them a great snack when you want something sweet that still supports your daily goals.

Adding blended cottage cheese is the secret here because it gives the cookies a soft, fudgy texture without any sour flavor.
It also adds moisture, so the cookies stay thick and chewy instead of drying out in the oven.
The nutty flavor from the tahini pairs so well with the melted chocolate, creating a rich treat that feels like a bakery cookie.
Why I Love This Recipe
High Protein Snack – Protein powder and blended cottage cheese turn regular chocolate chip cookies into a satisfying high protein treat.
Ultra Gooey Centers – Chilling the dough keeps these cookies thick with an irresistible, rich, and gooey center every single time.

Rich Nutty Flavor – Smooth tahini adds a deep, velvety richness that makes these taste way better than basic bakery cookies.
Crispy Seed Crust – Rolling the edges in sesame seeds adds a wonderful nutty crunch that pairs perfectly with soft chocolate.
The Ingredients
- 1/2 cup Full Fat Cottage Cheese
- 1/2 cup Tahini, Well Stirred
- 2 tbsp Unsalted Butter, Melted
- 2/3 cup Brown Sugar
- 1 Egg Yolk
- 1 tsp Vanilla Extract
- 1 cup All-Purpose Flour
- 1/2 cup Vanilla Protein Powder (Whey Casein Blend)
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 cup Dark Chocolate Chunks
- 1/4 cup Sesame Seeds
- 1 tsp Flaky Sea Salt
How to Make This Recipe
Step 1
Blend the cottage cheese until completely smooth. In a large bowl, whisk the blended cottage cheese, tahini, melted butter, brown sugar, egg yolk and vanilla until thick and glossy.
Step 2
Add the flour, protein powder, baking soda and salt, and stir until combined. Fold in the dark chocolate chunks.
Step 3
Cover and chill the dough for 1 hour. Tahini doughs are soft at first, and chilling gives you thick cookies with gooey, nutty centers.
Step 4
Preheat the oven to 350°F and line 2 baking sheets with parchment paper. Scoop the dough into 2 tablespoon balls and roll the edges in sesame seeds, leaving the tops bare.
Place the balls 2 inches apart on the baking sheets.
Step 5
Bake for 10 to 12 minutes, until the edges are golden and the centers look slightly soft. Sprinkle with flaky sea salt right away.
Step 6
Cool on the baking sheets for 10 minutes, then move to a wire rack.

Quick Tips
Blend the Cottage Cheese Completely Smooth
Make sure you blend the cottage cheese until it looks just like smooth yogurt before mixing it in. Any leftover curds will melt unevenly in the oven and leave wet pockets in your cookies.
I recommend using a small blender or food processor to get it completely creamy. This extra step guarantees a soft, bakery-style texture throughout the entire cookie.
Use a Whey and Casein Protein Blend
You’ll get the best results if you stick to a whey-casein blend rather than 100 percent whey protein. Pure whey tends to dry out during baking and can make your cookies taste rubbery or tough.

Casein absorbs liquid much better and keeps these high-protein cookies tender and gooey. It lets you pack in extra protein while keeping that classic, rich chocolate chip cookie texture.
Stir Your Tahini Thoroughly First
Tahini separates naturally in the jar, leaving a pool of oil on top and thick paste at the bottom. If you scoop from the top, your dough will be too oily and the cookies will spread into thin puddles.
From my experience, digging all the way to the bottom of the jar with a fork works best to combine everything. You want a smooth, uniform paste so your dough has the exact right moisture balance.

Quick Answers
Can I use pure whey protein powder instead of a whey-casein blend?
A whey-casein blend works best because casein absorbs moisture and keeps these protein-rich cookies chewy rather than dry.
You can still use pure whey if that is what you have, but keep a close eye on the oven and consider taking them out a minute early so they do not dry out.
