Pumpkin desserts are always popular this time of year, and these cottage cheese pumpkin swirl cheesecake bars are one of my favorites to bake.
They have a crisp gingersnap crust on the bottom and a smooth, lightly spiced pumpkin swirl right across the top.

Blending cottage cheese into the filling might sound unusual, but it makes the cheesecake texture surprisingly light and creamy.
It also cuts through some of the heavy richness that traditional cheesecake usually has, so you get a very clean and smooth taste.
These bars are easy to slice and keep great in the fridge, making them perfect for any family dessert.
Why I Love This Recipe
Spiced Gingersnap Crust – The snappy, warm ginger crust adds a crunchy bite that pairs nicely with the smooth cheesecake layer.
Ultra-Creamy Texture – Blending cottage cheese creates an unexpectedly silky, light filling that rivals any traditional bakery dessert.

Classic Fall Flavor – Cozy pumpkin pie spice and rich brown sugar bring real autumn comfort to every single square.
Eye-Catching Swirl – The marbled top looks stunning on a dessert platter without requiring any complicated decorating skills.

How to Make This Recipe
Step 1
Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment, leaving an overhang on two sides. Mix the gingersnap crumbs with the melted butter, press firmly into the pan and bake for 10 minutes.
Reduce the oven to 325°F and place a pan of hot water on the lower rack.
Step 2
Blend the cottage cheese in a food processor or blender for 2 to 3 minutes, scraping down the sides, until completely silky.
Step 3
Add the cream cheese, sugar, cornstarch, vanilla and salt and blend until smooth. Add the eggs and pulse just until combined.
Step 4
Transfer 1 cup of the cheesecake batter to a separate bowl and whisk in the pumpkin puree, brown sugar, pumpkin pie spice and egg yolk until smooth.
Step 5
Pour the plain batter over the crust and spread it evenly. Drop spoonfuls of the pumpkin batter over the top, then drag a skewer through both layers in a figure-eight pattern to create a marbled swirl.
Step 6
Bake on the middle rack for 40 to 45 minutes, until the edges are set and the center has a slight wobble.
Step 7
Let the bars cool completely in the pan, then refrigerate for at least 4 hours. Lift out using the parchment and cut into 16 bars.

Quick Tips
Blend the Cottage Cheese Thoroughly
Blend the cottage cheese completely on its own until you see zero curds remaining. It should look like thick, glossy cream before you add any other ingredients.
If you rush this step, your cheesecake bars will have tiny gritty specks instead of a silky texture. I recommend stopping your machine once or twice to scrape down the sides so nothing gets missed.
Use True Room Temperature Ingredients
Set your cream cheese, cottage cheese, and eggs on the counter about an hour before baking. Cold cream cheese is too firm and will leave stubborn little clumps in your batter.

Ingredients at room temperature combine quickly and stay completely smooth. This also helps keep you from overworking the batter while trying to mix it smooth.
Do Not Skip the Pan of Water
Placing a pan filled with hot water on the bottom rack creates gentle steam inside your oven. This keeps the air moist and helps the bars bake at a steady, gentle heat.
The steam keeps the top from drying out and cracking down the middle. It also ensures the edges stay soft and creamy rather than turning rubbery.

Quick Answers
Will the cottage cheese leave a grainy texture in the cheesecake?
As long as you blend the cottage cheese thoroughly before adding the other ingredients, the bars will turn out completely silky. Scraping the sides of your blender or food processor helps catch any stray curds so the filling matches traditional cheesecake.
Using full fat cottage cheese is also essential here because lower fat options contain more water and can turn watery after baking.
