I love cheesecake, but standard recipes can sometimes feel a bit too heavy to enjoy after dinner.
That is why I started making these cottage cheese raspberry swirl cheesecake bars instead.

Blending cottage cheese creates a silky smooth base that keeps the filling soft and light.
It gives the bars a mild, creamy taste that pairs naturally with the tart fruit on top.
You still get all the rich flavors of a classic dessert, but with a much lighter texture.
Why I Love This Recipe
Silky Smooth Texture – Blending the cottage cheese makes the filling surprisingly smooth and velvety without any curds.
Sweet and Tangy Balance – The tart raspberry swirl cuts through the rich cheesecake layer for the ideal sweet and tangy bite.

Bakery Quality Look – The vibrant red raspberry swirls create a stunning dessert that looks like it came from a fancy bakery.
Buttery Crisp Crust – A crisp, golden graham cracker crust adds the perfect crunchy contrast to the creamy filling.

How to Make This Recipe
Step 1
Cook the raspberries, sugar and lemon juice in a small saucepan over medium heat for 6 to 8 minutes, mashing the berries, until thick and jammy. Press through a fine mesh strainer to remove the seeds and let the sauce cool completely.
Step 2
Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment, leaving an overhang on two sides. Mix the graham cracker crumbs, sugar and melted butter, press into the pan and bake for 10 minutes.
Reduce the oven to 325°F and place a pan of hot water on the lower rack.
Step 3
Blend the cottage cheese in a food processor or blender for 2 to 3 minutes, scraping down the sides, until completely silky.
Step 4
Add the cream cheese, sugar, cornstarch, vanilla, lemon zest and salt and blend until smooth. Add the eggs and pulse just until combined.
Step 5
Pour the batter over the crust and spread it evenly. Drop small spoonfuls of the raspberry sauce over the top and drag a skewer through them to create a marbled pattern.
Step 6
Bake on the middle rack for 40 to 50 minutes, until the edges are set and the center has a slight wobble.
Step 7
Cool completely in the pan, then refrigerate for at least 4 hours. Lift out using the parchment and cut into 16 bars.

Quick Tips
Blend the Cottage Cheese Thoroughly
I recommend blending the cottage cheese completely on its own before adding the other ingredients. Take your time here and let your blender run for the full two to three minutes.
You will want to stop and scrape down the sides halfway through so no stray curds hide at the bottom. Doing this extra step ensures your cheesecake turns out completely silky without any gritty texture.
Cool the Raspberry Sauce Completely
You’ll get the best results if you let the seedless raspberry sauce cool down all the way before swirling it. Warm sauce is too thin and heavy, which makes it sink straight to the crust instead of staying on top.

From my experience, pushing the cooked fruit firmly through a fine mesh strainer is essential. It keeps out all the hard seeds so your swirl stays glossy and pleasant to eat.
Use Room Temperature Ingredients
Set your cottage cheese, cream cheese, and eggs on the counter about an hour before you bake. Cold cream cheese will stubbornly clump together, leaving tiny white lumps in your finished bars.
Room temperature eggs also mix in much faster with just a few quick pulses. This keeps you from whipping extra air into the batter, which is the main cause of surface cracks.

Quick Answers
Can I use low-fat cottage cheese instead of full-fat?
Full-fat cottage cheese gives the filling a rich texture that bakes up like a classic cheesecake.
You can use low-fat cottage cheese, but be sure to strain out extra liquid through a mesh strainer first so your crust does not get soggy.
