Ingredients  

  • 1 cup Cottage Cheese
  • 2 Large Eggs
  • 1/3 cup Light Brown Sugar
  • 2 tablespoons Neutral Oil
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 cup Rolled Oats
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Fine Salt
  • 1 cup Finely Grated Carrot
  • 1/2 cup Raisins
  • 1/3 cup Chopped Walnuts

Instructions 

  • Preheat the oven to 350 F and grease a 24-cup mini muffin pan.
  • Blend the cottage cheese, eggs, brown sugar, oil, and vanilla extract until smooth.
  • Whisk the flour, oats, baking powder, cinnamon, ginger, and salt together in a large bowl.
  • Stir the blended cottage cheese mixture into the dry ingredients. Fold in the grated carrot, raisins, and walnuts.
  • Divide the batter among the mini muffin cups, filling each one nearly to the top.
  • Bake for 14 to 17 minutes, until the centers spring back lightly. Cool the bites in the pan for 10 minutes before serving.
