Ingredients  

For the Cookie Crust

  • 1/2 cup Unsalted Butter (softened)
  • 1/2 cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 1/2 cups All Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt

For the Frosting

  • 1 1/2 cups Full Fat Cottage Cheese
  • 4 oz Cream Cheese (softened)
  • 1/3 cup Powdered Sugar
  • 1 tsp Vanilla Extract

For the Topping

  • 1 cup Sliced Strawberries
  • 1/2 cup Fresh Blueberries
  • 2 Kiwis (peeled and sliced)
  • 1 tbsp Honey

Instructions 

  • Preheat the oven to 350 F. Cream the butter and sugar until fluffy, beat in the egg and vanilla, then mix in the flour, baking powder and salt until a soft cookie dough forms.
  • Press the dough into a 12 inch circle on a parchment lined baking sheet or pizza pan.
  • Bake for 13-15 minutes until the edges are lightly golden, then cool completely.
  • Blend the cottage cheese, cream cheese, powdered sugar and vanilla for 1-2 minutes until whipped and completely smooth. Chill the frosting for 20 minutes so it thickens.
  • Spread the frosting in a thick layer over the cooled cookie crust.
  • Arrange the strawberries, blueberries and kiwi slices in circles over the frosting.
  • Warm the honey slightly and brush it over the fruit for a glossy finish. Chill for 1 hour, then slice and serve.
