Ingredients  

For The Dough

  • 1 cup Small Curd Cottage Cheese
  • 3/4 cup Warm Water
  • 2 1/4 tsp Instant Yeast
  • 1 tbsp Honey
  • 3 1/2 cups Bread Flour
  • 1 1/2 tsp Fine Salt
  • 2 tbsp Olive Oil

For The Topping

  • 3 tbsp Olive Oil
  • 1 tsp Flaky Salt
  • 1 tsp Dried Italian Herbs
  • 1 tbsp Chopped Fresh Rosemary

Instructions 

  • Blend the cottage cheese, warm water, yeast, and honey until smooth. Pour the mixture into a large bowl and stir in the bread flour, salt, and 2 tablespoons of olive oil until a sticky dough forms.
  • Knead the dough for 6 to 8 minutes, until elastic but still slightly tacky. Place it in an oiled bowl, cover, and let it rise for 60 to 75 minutes, or until doubled.
  • Coat a 9 x 13-inch baking pan with 1 tablespoon of the topping oil. Transfer the dough to the pan and gently stretch it toward the corners.
  • Cover the pan and let the dough rise for 30 to 40 minutes, until very puffy. Meanwhile, preheat the oven to 425 degrees F.
  • Drizzle the remaining topping oil over the dough. Press deep dimples across the surface with oiled fingertips, then sprinkle with flaky salt, Italian herbs, and rosemary.
  • Bake for 22 to 27 minutes, until the top and bottom are deep golden brown.
  • Let the focaccia cool in the pan for 10 minutes, then transfer it to a wire rack. Serve warm or at room temperature.
