Ingredients  

For The Crepes

  • 1 cup Low-Fat Cottage Cheese
  • 3 Large Eggs
  • 1/2 cup All-Purpose Flour
  • 1/4 cup 2% Milk
  • 1 tbsp Pure Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 tsp Fine Sea Salt
  • 1 tsp Butter For The Pan

For The Filling

  • 1 cup Plain Greek Yogurt
  • 1/2 cup Low-Fat Cottage Cheese
  • 2 tbsp Pure Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 1 cup Mixed Fresh Berries

Equipment

Instructions 

  • Blend the cottage cheese, eggs, flour, milk, maple syrup, vanilla, and salt until completely smooth, then rest the batter for 10 minutes.
  • Blend the Greek yogurt, cottage cheese, maple syrup, and vanilla until creamy, then refrigerate the filling.
  • Melt a small amount of butter in a nonstick skillet over medium heat and pour in about 1/4 cup of batter.
  • Tilt the skillet to spread the batter into a thin circle and cook for 60 to 90 seconds, until the edges lift easily.
  • Flip the crepe and cook for 20 seconds, then transfer it to a plate. Repeat with the remaining batter.
  • Spread the chilled filling over each crepe and add the mixed berries down the center.
  • Fold the crepes into thirds or roll them up, then serve immediately with extra berries.
