Ingredients  

For the Blueberry Swirl

  • 1 cup Fresh Blueberries
  • 1 tbsp Honey
  • 1 tsp Lemon Juice

For the Cheesecake Base

  • 1 1/2 cups Full Fat Cottage Cheese
  • 1/2 cup Plain Greek Yogurt
  • 1/3 cup Honey
  • 1 tsp Vanilla Extract
  • 1 tbsp Lemon Juice
  • 1/3 cup Crushed Graham Crackers

Equipment

Instructions 

  • Cook the blueberries, honey and lemon juice in a small pot over medium heat for 5-6 minutes, mashing gently, until jammy. Cool for 10 minutes.
  • Blend the cottage cheese, Greek yogurt, honey, vanilla and lemon juice until completely smooth and creamy.
  • Fold the crushed graham crackers into the cheesecake base so every bite has little pockets of crust.
  • Layer the cheesecake base and blueberry sauce into popsicle molds, then swirl gently with a skewer.
  • Insert the sticks and freeze for at least 6 hours until solid.
  • Run the molds under warm water for 10-15 seconds to release the popsicles and enjoy.
