Instructions
Cook the blueberries, honey and lemon juice in a small pot over medium heat for 5-6 minutes, mashing gently, until jammy. Cool for 10 minutes.
Blend the cottage cheese, Greek yogurt, honey, vanilla and lemon juice until completely smooth and creamy.
Fold the crushed graham crackers into the cheesecake base so every bite has little pockets of crust.
Layer the cheesecake base and blueberry sauce into popsicle molds, then swirl gently with a skewer.
Insert the sticks and freeze for at least 6 hours until solid.
Run the molds under warm water for 10-15 seconds to release the popsicles and enjoy.
