For the Pancakes

  • 1 cup Low-Fat Cottage Cheese
  • 2 large Eggs
  • 1/2 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Maple Syrup
  • 1 cup Oat Flour
  • 1/3 cup Vanilla Protein Powder
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Fine Salt
  • 1 teaspoon Butter, For Cooking

For the Pear Topping

  • 2 cups Diced Ripe Pears
  • 2 tablespoons Butter
  • 1 tablespoon Brown Sugar
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Cardamom
  • 1/3 cup Chopped Pecans

Instructions 

  • Blend the cottage cheese, eggs, milk, vanilla extract, and maple syrup until smooth.
  • Whisk the oat flour, protein powder, baking powder, cinnamon, and salt together in a bowl.
  • Stir the blended cottage cheese mixture into the dry ingredients and let the batter rest for 5 minutes.
  • Melt the 2 tablespoons of butter in a skillet over medium heat. Cook until the butter turns golden and smells nutty.
  • Add the pears, brown sugar, cinnamon, cardamom, and pecans to the brown butter. Cook for 5 to 7 minutes until the pears are tender and glossy.
  • Heat a lightly buttered nonstick skillet over medium-low heat. Cook the pancakes until bubbles form, then flip and finish cooking.
  • Spoon the brown butter pear topping over the warm pancake stack and serve.
