Melt the dark chocolate chips in the microwave in 20 second bursts, stirring between each one, until smooth. Set aside to cool slightly.
Add the cottage cheese, maple syrup, cocoa powder, vanilla extract and salt to a blender. Blend for a full 2 minutes, scraping down the sides, until completely silky.
With the blender running, pour in the melted chocolate and blend for 30 more seconds. The warm chocolate blends in and later firms up, giving the ice cream a rich fudgy texture.
Fold in the mini chocolate chips, then transfer the mixture to a loaf pan and smooth the top. Press a piece of parchment paper directly onto the surface.
Freeze for 4-5 hours until scoopable but firm.
Let the pan sit at room temperature for 10-15 minutes before scooping so the ice cream turns perfectly creamy.
