Ingredients  

  • 2 cups Full Fat Cottage Cheese
  • 1/2 cup Maple Syrup
  • 1/3 cup Unsweetened Cocoa Powder
  • 1/3 cup Dark Chocolate Chips
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1/4 cup Mini Chocolate Chips

Instructions 

  • Melt the dark chocolate chips in the microwave in 20 second bursts, stirring between each one, until smooth. Set aside to cool slightly.
  • Add the cottage cheese, maple syrup, cocoa powder, vanilla extract and salt to a blender. Blend for a full 2 minutes, scraping down the sides, until completely silky.
  • With the blender running, pour in the melted chocolate and blend for 30 more seconds. The warm chocolate blends in and later firms up, giving the ice cream a rich fudgy texture.
  • Fold in the mini chocolate chips, then transfer the mixture to a loaf pan and smooth the top. Press a piece of parchment paper directly onto the surface.
  • Freeze for 4-5 hours until scoopable but firm.
  • Let the pan sit at room temperature for 10-15 minutes before scooping so the ice cream turns perfectly creamy.
