For The Pancakes

  • 1 cup Cottage Cheese
  • 2 large Eggs
  • 3/4 cup Oat Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 scoop Chocolate Protein Powder
  • 1/3 cup Milk
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Baking Powder
  • 1 teaspoon Orange Zest
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Salt

For The Orange Yogurt Drizzle

  • 1/2 cup Plain Greek Yogurt
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Orange Juice
  • 1/2 teaspoon Orange Zest

For The Finish

  • 2 tablespoons Mini Dark Chocolate Chips
  • 1 tablespoon Chopped Candied Orange Peel

Instructions 

  • Blend the cottage cheese, eggs, milk, maple syrup, vanilla, and orange zest until smooth.
  • Whisk the oat flour, cocoa powder, protein powder, baking powder, and salt in a bowl. Stir in the blended mixture until no dry streaks remain.
  • Mix the Greek yogurt, maple syrup, orange juice, and orange zest in a small bowl to make the drizzle.
  • Heat a lightly greased skillet over medium-low heat. Cook the batter in small 1/4-cup portions until bubbles appear on the surface.
  • Flip each pancake and cook for 1 to 2 minutes more. Keep the heat moderate so the cocoa pancakes cook through without drying out.
  • Stack the pancakes and drizzle with the orange yogurt. Sprinkle with dark chocolate chips and candied orange peel.
