For The Pancakes

  • 1 cup Full Fat Cottage Cheese
  • 2 Large Eggs
  • 1/3 cup Whole Milk
  • 3 tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 2/3 cup Oat Flour
  • 1/3 cup Chocolate Protein Powder
  • 1/4 cup Unsweetened Cocoa Powder
  • 2 tsp Baking Powder
  • 1/4 tsp Fine Sea Salt
  • 1/4 cup Mini Dark Chocolate Chips
  • 2 tsp Avocado Oil

For The Peanut Butter Drizzle

  • 1/3 cup Creamy Peanut Butter
  • 1 tbsp Pure Maple Syrup
  • 3 tbsp Hot Water
  • 1/8 tsp Fine Sea Salt

Instructions 

  • Blend the cottage cheese, eggs, milk, maple syrup, and vanilla until smooth and creamy.
  • Whisk the oat flour, chocolate protein powder, cocoa powder, baking powder, and salt in a bowl.
  • Stir the cottage cheese mixture into the dry ingredients just until combined. Fold in the dark chocolate chips and rest the batter for 5 minutes.
  • Whisk the peanut butter, maple syrup, hot water, and salt until smooth and pourable. Set the drizzle aside.
  • Heat a nonstick skillet over medium-low heat and coat it with a thin portion of the avocado oil. Add 1/4 cup batter for each pancake.
  • Cook for 2 to 3 minutes, until the edges are firm and the centers begin to bubble. Turn and cook for another 1 to 2 minutes, adding the remaining oil between batches.
  • Drizzle the warm chocolate cottage cheese pancakes with the peanut butter sauce and serve immediately.
