Ingredients  

  • 2 cups Cooked Short-Grain White Rice
  • 1 1/2 cups Low-Fat Cottage Cheese
  • 1 cup 2% Milk
  • 1/3 cup Pure Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Fine Sea Salt
  • 1/4 cup Raisins
  • 2 tbsp Chopped Toasted Almonds

Instructions 

  • Blend the cottage cheese, milk, maple syrup, vanilla, cinnamon, and salt until smooth and creamy.
  • Pour the blended mixture into a saucepan and warm it over medium-low heat for 4 minutes, stirring frequently without allowing it to boil.
  • Stir the cooked rice and raisins into the warm cottage cheese mixture.
  • Cook for 5 to 7 minutes, stirring often, until the pudding thickens and the rice becomes tender.
  • Remove the pudding from the heat and let it stand for 10 minutes so the texture becomes creamy and spoonable.
  • Serve warm or refrigerate for at least 2 hours and top with toasted almonds before serving.
