  • 1 cup Cottage Cheese
  • 1 Large Egg
  • 1/3 cup Pure Maple Syrup
  • 2 tablespoons Melted Butter
  • 1 teaspoon Vanilla Extract
  • 1 scoop Vanilla Protein Powder
  • 1 cup Oat Flour
  • 1/2 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Fine Salt
  • 1/2 cup Chopped Pecans

Instructions 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Blend the cottage cheese, egg, maple syrup, melted butter, and vanilla extract until smooth.
  • Whisk the vanilla protein powder, oat flour, all-purpose flour, baking powder, cinnamon, and salt in a large bowl.
  • Stir the cottage cheese mixture into the dry ingredients until just combined.
  • Fold in the chopped pecans, then chill the dough for 25 minutes.
  • Scoop 12 portions onto the baking sheet and flatten each one slightly.
  • Bake for 12 to 14 minutes, until the edges are golden. Let the cookies cool on the baking sheet for 10 minutes to finish setting.
