Ingredients  

  • 6 oz Dark Chocolate
  • 2 tbsp Butter
  • 1 1/2 cups Full-Fat Cottage Cheese
  • 2 Large Eggs
  • 1/3 cup Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/3 cup All-Purpose Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 2 tbsp Chocolate Whey-Casein Protein Powder
  • 1/4 tsp Fine Salt
  • 6 Dark Chocolate Squares

Instructions 

  • Heat the oven to 400 F. Generously grease six 6-ounce ramekins and arrange them on a baking sheet.
  • Melt the 6 ounces dark chocolate with the butter until smooth, then let the mixture cool for 5 minutes.
  • Blend the cottage cheese, eggs, maple syrup, vanilla extract, and melted chocolate until completely smooth.
  • Add the flour, cocoa powder, protein powder, and salt. Blend briefly, stopping as soon as the dry ingredients are incorporated.
  • Divide half of the batter among the ramekins and place one dark chocolate square in the center of each. Cover with the remaining batter.
  • Bake for 13 to 16 minutes, until the tops and edges are set but the centers remain soft. Rest the cakes for 2 minutes before serving warm.
