Instructions
Heat the oven to 400 F. Generously grease six 6-ounce ramekins and arrange them on a baking sheet.
Melt the 6 ounces dark chocolate with the butter until smooth, then let the mixture cool for 5 minutes.
Blend the cottage cheese, eggs, maple syrup, vanilla extract, and melted chocolate until completely smooth.
Add the flour, cocoa powder, protein powder, and salt. Blend briefly, stopping as soon as the dry ingredients are incorporated.
Divide half of the batter among the ramekins and place one dark chocolate square in the center of each. Cover with the remaining batter.
Bake for 13 to 16 minutes, until the tops and edges are set but the centers remain soft. Rest the cakes for 2 minutes before serving warm.
