Ingredients  

  • 1 cup Full-Fat Small-Curd Cottage Cheese
  • 2 Large Eggs
  • 1 1/2 cups Finely Ground Oat Flour
  • 1/2 cup Finely Grated Parmesan Cheese
  • 1 tbsp Whole Psyllium Husk
  • 1 tsp Baking Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Fine Sea Salt
  • 1 tbsp Olive Oil

Instructions 

  • Preheat the oven to 425 F. Line a large baking sheet with parchment paper and lightly coat the parchment with a small amount of the olive oil.
  • Blend the cottage cheese, eggs, and remaining olive oil until completely smooth and creamy.
  • Stir together the oat flour, Parmesan cheese, psyllium husk, baking powder, garlic powder, and salt. Add the blended cottage cheese mixture and stir until a thick, even dough forms.
  • Let the dough rest for 10 minutes so the oat flour and psyllium can absorb the moisture. Spread it into a 12-inch circle about 1/4-inch thick on the prepared parchment.
  • Bake for 16 to 18 minutes, until the top is set and the edges are golden. Carefully turn the crust over and remove the parchment.
  • Bake directly on the baking sheet for another 5 to 7 minutes, until the second side is lightly browned. Cool for 3 minutes before adding pizza toppings.
