Ingredients  

For the Pancakes

  • 1 1/4 cups Low-Fat Cottage Cheese
  • 2 large Eggs
  • 1/3 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Orange Zest
  • 2 tablespoons Orange Juice
  • 1 tablespoon Honey
  • 1 1/4 cups Oat Flour
  • 1/3 cup Vanilla Protein Powder
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cardamom
  • 1/4 teaspoon Fine Salt
  • 1 teaspoon Butter, For Cooking

For the Orange Honey Yogurt

  • 1/2 cup Plain Greek Yogurt
  • 1 tablespoon Honey
  • 1 teaspoon Orange Zest
  • 1 teaspoon Orange Juice

For the Topping

  • 2 tablespoons Chopped Pistachios
  • 1 teaspoon Orange Zest

Instructions 

  • Blend the cottage cheese, eggs, milk, vanilla extract, orange zest, orange juice, and honey until smooth.
  • Whisk the oat flour, protein powder, baking powder, cardamom, and salt in a bowl.
  • Stir the blended cottage cheese mixture into the dry ingredients until no dry streaks remain. Rest the batter for 5 minutes.
  • Heat a lightly buttered nonstick skillet over medium-low heat. Cook each pancake until bubbles form and the edges look set.
  • Flip and cook for 1 to 2 minutes more, then transfer the pancakes to a serving plate.
  • Stir the Greek yogurt, honey, orange zest, and orange juice together until smooth.
  • Drizzle the orange honey yogurt over the pancakes and finish with chopped pistachios and orange zest.
