For The Pancakes

  • 1 cup Cottage Cheese
  • 2 large Eggs
  • 1 cup Oat Flour
  • 1 scoop Vanilla Protein Powder
  • 1/4 cup Milk
  • 2 tablespoons Creamy Peanut Butter
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Salt

For The Berry Compote

  • 1 cup Frozen Mixed Berries
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Lemon Juice

For The Finish

  • 2 tablespoons Creamy Peanut Butter
  • 2 tablespoons Chopped Roasted Peanuts

Instructions 

  • Blend the cottage cheese, eggs, milk, peanut butter, maple syrup, and vanilla until smooth.
  • Whisk the oat flour, protein powder, baking powder, and salt in a bowl. Stir in the blended mixture and rest the batter for 5 minutes.
  • Simmer the berries, chia seeds, maple syrup, and lemon juice in a saucepan over medium-low heat for 5 minutes. Mash a few berries while leaving some pieces whole.
  • Heat a lightly greased skillet over medium-low heat. Cook the pancakes in 1/4-cup portions until bubbles form and the edges are firm.
  • Flip and cook for 1 to 2 minutes more. Warm the remaining peanut butter briefly until it is easy to drizzle.
  • Layer the pancakes with the berry compote, then drizzle with peanut butter and sprinkle with roasted peanuts.
