  • 1 cup Cottage Cheese
  • 2 large Eggs
  • 1 cup Oat Flour
  • 1 scoop Vanilla Protein Powder
  • 1/4 cup Milk
  • 2 tablespoons Finely Chopped Pistachios
  • 1 tablespoon Maple Syrup
  • 1/2 teaspoon Rose Water
  • 1/2 teaspoon Ground Cardamom
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Fine Salt

For The Topping

  • 3/4 cup Plain Greek Yogurt
  • 1 tablespoon Honey
  • 1/2 teaspoon Vanilla Extract
  • 2 tablespoons Finely Chopped Pistachios
  • 1 teaspoon Dried Rose Petals

Instructions 

  • Blend the cottage cheese, eggs, milk, maple syrup, and rose water until smooth and creamy.
  • In a bowl, whisk together the oat flour, protein powder, baking powder, cardamom, and salt. Stir in the blended mixture and chopped pistachios until a thick batter forms.
  • Mix the Greek yogurt, honey, and vanilla in a small bowl until smooth. Refrigerate it while the pancakes cook.
  • Heat a lightly greased skillet over medium-low heat. Cook the pancakes in 1/4-cup portions for 2 to 3 minutes, until the tops bubble and the edges are firm.
  • Flip the pancakes and cook for another 1 to 2 minutes until golden and cooked through.
  • Serve the pancakes with the honey yogurt, chopped pistachios, and rose petals scattered over the top.
