  • 1 scoop Vanilla Protein Powder
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Milk
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Baking Powder
  • 1 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Salt

For The Cream Topping

  • 3/4 cup Plain Greek Yogurt
  • 1 tablespoon Maple Syrup
  • 1/2 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Vanilla Extract

For The Finish

  • 2 tablespoons Chopped Pecans
  • 1 tablespoon Pumpkin Seeds

Instructions 

  • Blend the cottage cheese, eggs, pumpkin puree, milk, maple syrup, and vanilla until smooth.
  • Whisk the oat flour, protein powder, baking powder, pumpkin pie spice, and salt in a bowl. Stir in the blended mixture until just combined.
  • Mix the Greek yogurt, maple syrup, pumpkin pie spice, and vanilla in a small bowl until smooth.
  • Heat a lightly greased skillet over medium-low heat. Cook the pancakes in 1/4-cup portions until the surface bubbles and the edges are firm.
  • Flip and cook for 1 to 2 minutes more, keeping the heat low enough to prevent the pumpkin from scorching.
  • Serve with the spiced yogurt topping, pecans, and pumpkin seeds.
