Ingredients  

  • 1 cup Cottage Cheese
  • 1 Large Egg
  • 1/3 cup Granulated Sugar
  • 2 tablespoons Melted Butter
  • 1 teaspoon Vanilla Extract
  • 1 scoop Vanilla Protein Powder
  • 1 cup All-Purpose Flour
  • 1/2 cup Almond Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Fine Salt
  • 1/3 cup Freeze Dried Raspberries
  • 1/3 cup White Chocolate Chips

Instructions 

  • Preheat the oven to 350°F and line two baking sheets with parchment paper.
  • Blend the cottage cheese, egg, sugar, melted butter, and vanilla extract until smooth.
  • Whisk the vanilla protein powder, all-purpose flour, almond flour, baking powder, and salt in a large bowl.
  • Add the blended cottage cheese mixture to the dry ingredients and stir until just combined.
  • Gently fold in the freeze dried raspberries and white chocolate chips. Chill the dough for 25 minutes.
  • Scoop 12 rounded portions onto the baking sheets and flatten each cookie slightly.
  • Bake for 12 to 14 minutes, until the edges are lightly golden. Cool on the baking sheets for 10 minutes so the cookies can set.
