  • 1 cup Cottage Cheese
  • 1 Large Egg
  • 1/4 cup Honey
  • 2 tablespoons Melted Butter
  • 1 teaspoon Vanilla Extract
  • 1 scoop Vanilla Protein Powder
  • 3/4 cup All-Purpose Flour
  • 3/4 cup Oat Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Cream Of Tartar
  • 1/4 teaspoon Fine Salt
  • 2 tablespoons Granulated Sugar
  • 1 teaspoon Ground Cinnamon

Instructions 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Blend the cottage cheese, egg, honey, melted butter, and vanilla extract until smooth and creamy.
  • Whisk the protein powder, all-purpose flour, oat flour, baking powder, cream of tartar, and salt in a bowl.
  • Stir the cottage cheese mixture into the dry ingredients until a thick, sticky dough forms.
  • Mix the granulated sugar and cinnamon in a small bowl. Chill the cookie dough for 20 minutes.
  • Roll the dough into 12 balls, coat each ball in the cinnamon sugar, and place them on the baking sheet. Flatten them slightly.
  • Bake for 11 to 13 minutes, until the tops look set and the edges are lightly golden. Let the snickerdoodles cool for 10 minutes before serving.
