Ingredients  

  • 2 cups Low-Fat Cottage Cheese
  • 1/2 cup Plain Greek Yogurt
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 1/2 cups Chopped Frozen Spinach, Thawed And Squeezed Dry
  • 1 cup Chopped Marinated Artichoke Hearts
  • 2 Garlic Cloves, Minced
  • 1 tbsp Lemon Juice
  • 1/2 tsp Fine Sea Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Crushed Red Pepper Flakes

Instructions 

  • Preheat the oven to 400 F and lightly grease a small baking dish.
  • Blend the cottage cheese, Greek yogurt, lemon juice, salt, black pepper, and red pepper flakes until smooth.
  • Stir the blended mixture with the spinach, artichokes, garlic, mozzarella, and Parmesan.
  • Spread the dip evenly into the prepared baking dish.
  • Bake for 22 to 25 minutes, until bubbling around the edges and lightly golden on top.
  • Rest the dip for 5 minutes before serving so it thickens into a scoopable texture.
