Ingredients  

For The Pancakes

  • 1 cup Cottage Cheese
  • 2 large Eggs
  • 1 cup Oat Flour
  • 1 scoop Vanilla Protein Powder
  • 1/3 cup Milk
  • 1/3 cup Pitted Medjool Dates
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Salt

For The Toffee Yogurt

  • 3/4 cup Plain Greek Yogurt
  • 2 tablespoons Caramel Sauce
  • 1 tablespoon Finely Chopped Pitted Medjool Dates
  • 1/2 teaspoon Vanilla Extract

For The Finish

  • 2 tablespoons Chopped Pecans
  • 1 tablespoon Caramel Sauce

Instructions 

  • Cover the dates with hot water and let them stand for 5 minutes. Drain well.
  • Blend the cottage cheese, eggs, milk, softened dates, maple syrup, and vanilla until smooth.
  • Whisk the oat flour, protein powder, baking powder, and salt in a bowl. Stir in the blended mixture until a thick, pourable batter forms.
  • Mix the Greek yogurt, caramel sauce, chopped dates, and vanilla in a small bowl.
  • Cook the pancakes in a lightly greased skillet over medium-low heat until bubbles form and the edges are set. Flip and cook for 1 to 2 minutes more.
  • Stack the pancakes with the toffee yogurt and top with pecans and caramel sauce.
