Cook the lasagna noodles in salted water until flexible but not fully tender, then drain and lay them flat on a lightly oiled baking sheet.
Heat the olive oil in a skillet and cook the ground turkey for 6 to 8 minutes, breaking it into small crumbles until no longer pink.
Blend the cottage cheese, egg, Parmesan, Italian seasoning, garlic powder, salt, and pepper until creamy, then fold in the spinach and 1 cup of mozzarella.
Spread the cottage cheese filling over each noodle and sprinkle the cooked turkey evenly on top.
Roll up each noodle tightly and place it seam-side down in the baking dish.
Spoon the remaining marinara sauce over the roll ups and sprinkle with the remaining mozzarella.
Cover with foil and bake for 25 minutes. Remove the foil and bake for 8 more minutes, then rest for 5 minutes before serving.
