Ingredients  

For the Panna Cotta

  • 2 1/2 tsp Unflavored Gelatin
  • 3 tbsp Cold Water
  • 1 cup Whole Milk
  • 1/3 cup Honey
  • 2 tsp Vanilla Bean Paste
  • 1 1/2 cups Full Fat Cottage Cheese
  • 1/2 cup Heavy Cream

For the Berry Sauce

  • 1 cup Fresh Raspberries
  • 2 tbsp Honey
  • 1 tsp Lemon Juice

Instructions 

  • Sprinkle the gelatin over the cold water in a small bowl and let it bloom for 5 minutes.
  • Warm the milk and honey in a small pot until steaming but not boiling. Remove from the heat and whisk in the bloomed gelatin and vanilla bean paste until fully dissolved.
  • Add the cottage cheese and heavy cream to a blender and blend for 2 minutes until completely silky.
  • With the blender running on low, slowly pour in the warm milk mixture and blend for 30 seconds until everything is combined.
  • Divide the mixture between 6 small glasses or ramekins and chill for at least 4 hours until set with a gentle wobble.
  • Simmer the raspberries, honey and lemon juice in a small pot for 4-5 minutes, mashing lightly, then cool completely.
  • Spoon the berry sauce over the panna cotta just before serving.
