  • 1 cup Cottage Cheese
  • 1 Large Egg
  • 1/3 cup Maple Syrup
  • 2 tablespoons Melted Butter
  • 1 teaspoon Vanilla Extract
  • 1 scoop Vanilla Protein Powder
  • 1 cup Oat Flour
  • 1/2 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Fine Salt
  • 3 tablespoons Rainbow Sprinkles

Instructions 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Blend the cottage cheese until completely smooth. Add the egg, maple syrup, melted butter, and vanilla extract, then blend until combined.
  • Whisk the vanilla protein powder, oat flour, all-purpose flour, baking powder, and salt in a large bowl.
  • Pour the blended cottage cheese mixture into the dry ingredients and stir until a soft dough forms. Fold in the sprinkles without overmixing.
  • Chill the dough for 25 minutes so it becomes firm enough to scoop.
  • Scoop 12 portions onto the prepared baking sheet and gently flatten each one with damp fingertips.
  • Bake for 11 to 13 minutes, until the edges are lightly golden. Cool the cookies on the baking sheet for 10 minutes before moving them to a rack.
