Cottage Cheese Pumpkin Spice Bread

This cozy pumpkin spice bread bakes up wonderfully moist and tender. Warm autumn spices and a crunchy sugared top make every slice a treat.

Ingredients  

  • 1 cup Small Curd Cottage Cheese (I highly recommend using this one - amazon)
  • 1 cup Pumpkin Puree
  • 2 Large Eggs
  • 3/4 cup Packed Light Brown Sugar
  • 1/4 cup Avocado Oil
  • 2 tsp Vanilla Extract
  • 2 1/4 cups All-Purpose Flour (use this, the only one I use - amazon)
  • 1 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Nutmeg
  • 3/4 tsp Fine Salt
  • 1/2 cup Chopped Toasted Pecans
  • 2 tbsp Coarse Sugar

Instructions 

  • Preheat the oven to 350 degrees F. Coat a 9 x 5-inch loaf pan with nonstick cooking spray and line it with parchment paper.
  • Blend the cottage cheese, pumpkin puree, eggs, brown sugar, avocado oil, and vanilla until smooth.
  • Whisk the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a large bowl.
  • Fold the cottage cheese mixture into the dry ingredients just until combined. Fold in the pecans, reserving 2 tablespoons for the top.
  • Spread the batter evenly in the prepared pan. Sprinkle the top with the coarse sugar and reserved pecans.
  • Bake for 55 to 62 minutes, until the center is set and a tester comes out with a few moist crumbs. Loosely cover the pan with foil if the top darkens too quickly.
  • Cool in the pan for 20 minutes, then transfer the bread to a wire rack and cool completely.
