Ingredients  

  • 1 cup Full-Fat Small-Curd Cottage Cheese
  • 1 Large Egg
  • 2 cups Spelt Flour
  • 1 tbsp Baking Powder
  • 3/4 tsp Fine Sea Salt
  • 1/2 tsp Garlic Powder
  • 1 tsp Dried Italian Seasoning
  • 2 tbsp Olive Oil

Instructions 

  • Preheat the oven to 450 F and place a baking sheet inside to heat. Blend the cottage cheese, egg, and 1 tablespoon of the olive oil until smooth.
  • Whisk together the spelt flour, baking powder, salt, garlic powder, and Italian seasoning. Add the cottage cheese mixture and stir just until a soft dough forms.
  • Let the dough rest for 8 minutes. Avoid prolonged kneading because lightly handled spelt flour produces a more tender crust.
  • Place the dough between two pieces of parchment and press it into a 12-inch circle about 1/4-inch thick. Remove the top parchment and brush the dough with the remaining olive oil.
  • Transfer the dough and bottom parchment to the hot baking sheet. Bake for 9 to 11 minutes, until the surface is set and the bottom is lightly golden.
  • Add toppings and bake for another 7 to 9 minutes, until the edge is crisp and the center is fully cooked.
