  • 1 cup Full-Fat Small-Curd Cottage Cheese
  • 1 cup Cooked Mashed Sweet Potato
  • 1 Large Egg
  • 1 3/4 cups Finely Ground Oat Flour
  • 1/2 cup Tapioca Flour
  • 1 tbsp Whole Psyllium Husk
  • 1 tsp Baking Powder
  • 1/2 tsp Dried Rosemary
  • 3/4 tsp Fine Sea Salt
  • 1 tbsp Olive Oil

Instructions 

  • Preheat the oven to 425 F. Line a baking sheet with parchment paper and lightly brush it with the olive oil.
  • Blend the cottage cheese, mashed sweet potato, and egg until smooth and uniform.
  • Combine the oat flour, tapioca flour, psyllium husk, baking powder, rosemary, and salt. Stir in the cottage cheese mixture until a thick, soft dough forms.
  • Let the dough rest for 12 minutes. Spread it into a 12-inch circle about 1/4-inch thick, smoothing the surface with a lightly dampened spatula.
  • Bake for 20 to 23 minutes, until the surface is dry and the edges are browned. Turn the crust over and remove the parchment.
  • Bake for another 7 to 9 minutes, until the second side develops golden spots. Cool for 5 minutes before topping so the crust can finish setting.
